Artichoke Bruschetta



Topping ingredients:
2 C Artichoke hearts, drained and sliced
½ C Roasted red peppers, peeled, seeded and chopped
½ C Kalamata olives, pitted and chopped

Dressing for topping:
¾ C Red wine vinegar
1 T Sugar
½ T Black pepper
½ T Salt
½ T Italian seasoning
½ C. Extra Virgin olive oil
1 T Chopped parsley

Ingredients to assemble bruschetta:

Good crusty bread like a fresh baguette, or a peasant boule
Basil, chiffonade
Mint, chiffonade
Fresh garlic, crushed
Kosher Salt & Fresh cracked pepper

Method of Preparation:

Preparation of topping:

  1. Whisk all dressing ingredients together in mixing bowl
  2. Toss in artichokes, peppers and olives

Method of assembly:

  1. Cut the bread in slices or open the loaf in half depending on what bread you have chosen and bake, broil or toast
  2. Scoop the “guts”of the bruschetta onto the bread and then liberally drizzle the dressing on top
  3. Garnish with fresh basil and mint and season with salt & fresh cracked pepper

This bruschetta is also delicious with shaved fresh parmesan or with buffalo mozzarella.
